Easy weekend cooking: Tamago-Sando
When I worked in Shinagawa, a Tokyo suburb, my lunch routine was simple, reliable, and deeply satisfying: a tamago-sando from the konbini. Every day around noon, I’d slip out of the office and head to the nearest convenience store, usually a Lawson or FamilyMart. Make your own tamago-sando at home
Ingredients:
2 hard-boiled eggs
1.5–2 tbsp Japanese mayonnaise (like Kewpie)
A pinch of salt
A dash of white pepper (optional)
2 slices of soft white bread (preferably crustless)
Instructions:
Peel and mash the boiled eggs in a bowl.
Add Japanese mayo, salt, and pepper. Mix until smooth but still slightly chunky.
Spread the egg mixture evenly between two slices of bread.
Trim the crusts if needed, and cut into halves or quarters.
Serve chilled or at room temperature—with green tea for the full konbini lunch vibe.
